Vines
 

A vineyard of property is always composed of pieces of vines distributed on several villages, several exposures, and several declivities of ground getting for the collected grapes different characteristics. With the field, we always seek best the expression of the soil through our grapes.

Pieces in slope

The solar exposure is optimal there. The sunning on the Champagne calcareous ground makes mature the grapes. The best exposure is South-eastern making profit from the morning solar rays to quickly evacuate the generating night dew of diseases and grey rot at the end of the vegetative cycle. These pieces on our premises are reserved for the Chardonnay type of vine. Their work is there more difficult .The flow of these grounds is fast and the contribution of coldly there crushed barks stabilizes the ground and avoids erosion.

 

Pieces in Plain 

Their work is easier. The absence or the weak declivity allows the work of the ground. These pieces are also amended in barks for a natural food of the vine and a contribution of humus. The type of vines chosen for these vines in plain depends on the nature of the ground and their capacity to be matured. Pinot noir and the pinot meunier are present there with adapted under stocks.
 

The grounds  

The grounds Champagne are mainly limestone, but their surfaces are made up of a more or less significant layer of ground of different composition according to the same areas, villages and pieces' they. The commune of POUILLON, slightly elevated compared to the other villages of the MASSIF DE ST THIERRY (Champagne area in the Western North of RHEIMS) has a ground known as "sparnassien" dating from the Quaternary higher cretaceous characterized by a muddy deposit on a fine basis of clay. It is a ground adapted particularly well to the Meunier type of vine cut in the long face on short frames, because the strength gotten by the ground must be controlled by the production of wood (simple Guyot size). The villages bordering (MERFY, ST THIERRY, and CHENAY) have grounds with siliceous component with basements on the basis of lime sand much filter and flow down it more quickly. The size employed in these villages is the " Cordon de Royat”, or “Chablis” size (short size on long frames). These two types of size are more favourable with this type of grounds.

Type of size

Our exploitation comprises three types of size (the Champagne size is regulated since January 17, 1978): Guyot, the «Cordon de Royat» for black type of vines and «Chablis» for Chardonnay in sloping grounds. The size on our field is reasonable there by privileging the spacing and the ventilation of the future bunches. It has allowed the dead end for 15 years on the products anti-rot and the control of the outputs, because on our field, none grapes does not remain in the vines after the vintage.
 

Old pieces
 

The average lifespan of the Champagne vines is 30 years. The average age of our pieces is 24 years. We also have the 44 years, 37 years pieces, 35 years giving a quality of invaluable vintage thanks to their system racinaire anchored deeply in the ground and to a quite less productivity. Maturities are earlier there and they are often gathered the grapes in first. The grapes are small and fewer there and of very good quality.
